Diners perch beside live charcoal braziers while the Iron Chef–winning proprietor pounds mortar after mortar of fiery papaya salad. Regulars know the drill: grab an order slip, tick off skewers of pik gai yang and succulent grilled pork neck, then spoon sticky rice into bamboo baskets. The chili heat in the tam pa builds quickly, balanced by sweet-sour tamarind dipping sauce and cold cups of ice.
