Cast-iron pans arrive laden with squid ink rice, flanked by garlicky gambas al ajillo and suckling pig with crisp skin. On select weekends, the room fills with the clink of glasses as roving trolleys carve cuts of Jamón Ibérico alongside chilled seafood platters and free-flow Champagne.
